brown rice

Ingredients:

  • 2 cups cooked brown rice
  • 1/2 cup corn kernels (roasted is a nice touch)
  • 2-3 seeded, chopped plum tomatoes
  • 1/4 cup chopped green and red pepper
  • 2-3 chopped green onions
  • 1/2 cup shredded Monterey jack cheese
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1/4 cup olive oil
  • 1 teaspoon red pepper flakes (optional)

Preparation:

Toss all ingredients in a bowl, add salt and pepper to taste, and serve.
