Ingredients:
- 2 cups cooked brown rice
- 1/2 cup corn kernels (roasted is a nice touch)
- 2-3 seeded, chopped plum tomatoes
- 1/4 cup chopped green and red pepper
- 2-3 chopped green onions
- 1/2 cup shredded Monterey jack cheese
- 1 garlic clove, minced
- 2 tablespoons lime juice
- 1/4 cup olive oil
- 1 teaspoon red pepper flakes (optional)
Preparation:
Toss all ingredients in a bowl, add salt and pepper to taste, and serve.
